Hello lovelies! I was at a local coffee shop when I tried the most amazing cookie: a gluten-free chocolate cranberry walnut cookie! Let me just say this was one of the best gluten-free cookies I have EVER tried! I’ve had trouble finding good gluten-free baked goods, so when I tried this I knew I needed to find the recipe. Unfortunately, I could not find the recipe online so I decided to try to make my own recipe. This is my first time creating my own gluten free recipe, which was very exciting! It took me a couple tries to figure out, however the final result was absolutely amazing. I hope you find these cookies to be delicious too!  Without further ado, lets get in the recipe!!!

Gluten-Free Dark Chocolate Cranberry Walnut Cookies
  1. Preheat the oven to 375.
  2. In a medium bowl, mix the baking flour, xanthan gum, baking soda, and salt.
  3. In a separate bowl, mix together the granulated sugar, brown sugar, and butter.
  4. Mix the eggs into the sugar mixture.
  5. Add the vanilla extract into the sugar mixture and mix.
  6. Slowly mix the dry ingredients into the sugar mixture.
  7. Mix in the walnuts, cranberries, and chocolate.
  8. Optional: let the dough chill in the fridge for a couple hours.
  9. Roll dough into balls. Flatten the balls in order to make them easier to bake.
  10. Place the flattened dough balls onto a cookie sheet.
  11. Bake for 12-15 minutes.
