Hello lovelies! Today I have a fairly simple recipe for you: Gluten-Free Margarita Pizza! I don’t know about you, but I absolutely love the combination of motzerella cheese, basil, and tomatoes! It’s just soooo good!!!! What better way to combine these ingredients than on a pizza? I hope you enjoy this recipe as much as I do! Without further ado, let’s get into the recipe!

Gluten-Free Margarita Pizza
  1. Preheat the oven to the specifications for your pizza crust.
  2. Spread the olive oil over the pizza crust.
  3. Spread the motzerella cheese over the olive oil.
  4. Optional: Cut the basil leaves into thin pieces.
  5. Place the basil on the pizza.
  6. Cut the tomatoes into smaller pieces and place it on the pizza.
  7. Baking time depends on the type of pizza crust you've chosen, however I recommend you bake it for a minimum of 10 minutes.
  8. Let the pizza cool for a few minutes, then enjoy!

Hello lovelies! I was at a local coffee shop when I tried the most amazing cookie: a gluten-free chocolate cranberry walnut cookie! Let me just say this was one of the best gluten-free cookies I have EVER tried! I’ve had trouble finding good gluten-free baked goods, so when I tried this I knew I needed to find the recipe. Unfortunately, I could not find the recipe online so I decided to try to make my own recipe. This is my first time creating my own gluten free recipe, which was very exciting! It took me a couple tries to figure out, however the final result was absolutely amazing. I hope you find these cookies to be delicious too!  Without further ado, lets get in the recipe!!!

Gluten-Free Dark Chocolate Cranberry Walnut Cookies
  1. Preheat the oven to 375.
  2. In a medium bowl, mix the baking flour, xanthan gum, baking soda, and salt.
  3. In a separate bowl, mix together the granulated sugar, brown sugar, and butter.
  4. Mix the eggs into the sugar mixture.
  5. Add the vanilla extract into the sugar mixture and mix.
  6. Slowly mix the dry ingredients into the sugar mixture.
  7. Mix in the walnuts, cranberries, and chocolate.
  8. Optional: let the dough chill in the fridge for a couple hours.
  9. Roll dough into balls. Flatten the balls in order to make them easier to bake.
  10. Place the flattened dough balls onto a cookie sheet.
  11. Bake for 12-15 minutes.

Zucchini Boats

I don’t know about you guys, but I have a hard time getting my vegetables in. What can I say I’m just not a vegetable girl. One simple and delicious way I incorporate veggies in my diet is through zucchini boats. Zucchini boats are easy to make and can be topped with anything you like to mask the healthy taste, making them a great to eat! The best part about them is that it only takes about 20 minutes to make! If you’d like to learn how to make these delicious zucchini boat then keep reading.

  • zucchini
  • olive oil
  • toppings of your choice ( I prefer different types of cheeses)



  1. Turn the oven on to 350°.
  2. Cut off the ends of the ends of the zucchini, then cut lengthwise down the zucchini, forming two halves.
  3. Use a spoon or any other tool that could help you scrape out some of the insides of the halves forming a boat shape
  4. Drizzle olive oil over the zucchini halves.
  5. Add whatever topping you would like.
  6. Place the topping covered boats into the oven for 15 minutes.

Strawberry Goat Cheese Salad

As a gluten free vegetarian, I find myself eating salads quite a bit. My favorite by far is this strawberry goat cheese salad. I could easily eat this salad every day it is that good. This salad is great for both lunch and dinner and could easily be made when entertaining guests. You could easily pay about $8-12 on a single serving of this salad at restaurants or you could make it at home for about the same price. Spring Salad

• Spinach
• Strawberries
• Crumbled Goat Cheese
• Red Onion
• Chopped almonds or walnuts (optional)
• Dressing of your choice (I prefer a poppy seed dressing or a balsamic vinaigrette)
Salad ingedients

1. Wash the spinach and strawberries thoroughly with water.
2. Place handfuls of spinach in a large bowl depending on how much salad you would like to make.
3. Chop up the strawberries and place them on top of the spinach.
4. Chop as much red onion as you would like and place it in the bowl.
5. Dump the crumbled goat cheese in the bowl.
6. Add your dressing of choice to the salad.
7. Toss the salad until the ingredients are thoroughly mixed.
8. Serve and enjoy!

Ta-duh, your salad is finished. For all you non-vegetarian types feel free to add chicken or some other type of meat if you want. Overall this strawberry goat cheese salad costs between $15 and $20, however, keep in mind that this makes several servings of salad.
